Hemp-Hearty Egg Bites

Our little ones go crazy over these cheesy, protein packed egg bites with hidden veggies! They are a great way to start the day or snack on throughout the day for a quick protein boost! 

Ingredients:

  • 1/2 cup butternut squash, finely grated
  • 2 eggs, lightly beaten
  • 1/2 cup Tiny Sprouts Hemp Hearts
  • 1/2 cup cottage cheese (drained if needed)
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons grated parmesan cheese
  • 1/4 tsp onion powder

Directions:

  1. Preheat oven to 350 degrees and grease 12 mini muffin cups with nonstick spray.
  2. Stir all ingredients together in a medium bowl. Spoon into muffin cups.
  3. Bake for 18-20 minutes or until firm to the touch and golden brown around the edges.
  4. Let cool for about 5 minutes in the pan before serving to allow them to firm up a bit. Serve warm or at room temperature.
