Sheet Pan Brainy Baked Pancakes

If you haven't tried sheet pan pancakes then what are you waiting for?! These easy make-ahead pancakes are the best nutrient packed breakfast for busy mornings. They even have omega-3 DHA to support cognition and brain health in children. Suitable for kiddos of all ages!

Ingredients:

  • 1 ¼ cups buttermilk
  • 1 large egg
  • 3 tbsp melted butter
  • 1.5 cups all-purpose flour
  • 1/4 cup Tiny Sprouts Brain Booster
  • 1 tbsp sugar (optional, omit for babies)
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 400 degrees. Line a 9x13 baking pan with parchment paper and lightly grease with nonstick cooking spray. Set aside.
  2. In a medium bowl, whisk together buttermilk, egg, and butter. Add flour, Brain Booster, sugar (if using), baking powder, baking soda, and salt. Whisk until combined.
  3. Spread batter evenly in the pan; it will be a thin layer.
  4. Bake for 15-20 minutes until puffy and lightly golden on the edges; the top of the pancake will spring back lightly when gently pressed.
  5. Top with yogurt mixed with Tiny Sprouts Hemp Hearts and berries or maple syrup! 

Notes:

  • Freeze leftovers for up to 3 months!
